This is one tough outdoorswoman and a product of Northern Ontario, a small town called Manitouwadge, who now resides in Southern Ontario. 4 - 5 lb pork loin1/4 cup brown sugar2 tablespoons kosher salt1 tablespoon onion powder1 tablespoon garlic powder1 tablespoon chilli powder1 teaspoon ground cinnamon1/4 teaspoon ground nutmeg1/4 teaspoon ground red pepper
Combine dry ingredients in a bowl, then spread all over pork loin on all sides. Wrap bacon on pork loin in a weave-style (it looks pretty).
Smoke on 250 F for about 2 hours until the thickest inner meat reaches a temperature of 145 F using Apple. (depending on thickness of meat, it might need a bit longer).
Let stand for about 15 minutes, and cut into it for a delicious double smoked flavor.
1 lb. bear roast, sliced (smoked for 5 hours with hickory)
4 cups of sliced carrots
1/2 cup of green onions
1/2 cup of chives4 cups of rice
1/2 cup of white onion
5 cups of beef broth
After bear comes out of the smoker, place in slow cooker for 4 hours on high to get a tender and juicy texture that melts in your mouth.
Place white onion and carrots in pan with lid and simmer until soft in 1/2 cup of beef broth, add bear meat, rice and remaining beef broth and let simmer for about 35 minutes or until no more liquids are visible.
Sprinkle green onions and chives over finished dish. (optional: fresh parsley sprigs)
